    A microproduction here from 50 year old grenache/carignan, and young vine syrah planted at the base of the hillside terraces where the senior Vacqueyras vines are found.  Harvested by hand and given a shorter cuvaison than the Vacqueyras, it is a superbly made VDP.  It has a dark cherry, spicy fruit with a southern print, is supple and not too dense and has that most important quality of being easily drinkable.  Unfined and unfiltered.  For drinking now to 2019.

34% syrah (15 yrs), 33% old Grenaches (55 yrs) and 33% old carignans (55 yrs). Massal selection on local old vines for carignan and grenache; clonal selection for syrah.
Clay and limestone silt for grenache and carignan – sandy soil for syrah, 100 mtrs above sea-level.
Debudding. Don’t carry out vendanges en vert. Plough from March to May until the vine flowers. Leave grass to grow naturally according to the needs of every parcel. Mechanical work of the soil; uses lawn mower. No chemical herbicides or pesticides, no fertilizers. Sulphur and copper used against mildew and oidium. Trellis and thinning out the leaves for syrah. Organic certification with Ecocert©. Harvested by hand. Manual sorting of the grapes once they arrive in the cellar. Between 40 and 45hl yield depending on vintages.
100% destalking. Alcoholic fermentation in concrete tank. Fermentation for 12 to 18 days at 18°C (30°C max) using natural, indigenous yeasts. One remontage per day, very little pigeage, depending on grapes and vintages. Pressed by a hydraulic horizontal press. The press wine is blended after analysis and when the sugar level is decreasing. Aged for 6 months in tanks. 3 or 4 racking when the weather is good. Tangential filtration, no fining. 2 bottling in April and June. 10000 bottles produced on average
