    40 year old, north facing vines planted in a mix of marl, clay, gravel and limestone here yield 32hh. Two thirds destalked and aged for 18 months in five year old foudres then unfined and unfiltered, this has a bright, clear but deep healthy colour, ripe black fruits on the nose with notes of liquorice, tar and spice. It has an excellent mouthfeel, is long and fresh with fine grained tannins. For drinking now to 2018

90 %Mourvèdre and 10% Grenache. 40 year old vines on R110 rootstock. 5000 vines per hectare on average trained in gobelet and cordon de Royat.
Trias, clay, limestone and gravette soils, very well drained. 200 mtrs above sea-level. North aspect on 10% slopes. Soil depth 60cm approx.
Debudding. Carries out vendanges en vert in July. Tractor and sheeps are used to manage grass. Plough during Spring and leave grass to grow during Winter (for 5 months minimum). No chemical herbicides or pesticides, only organic compost (sheep manure or guano) once a year. Copper against mildew and sulphur against oidium. No treatment against pest (very low level of moisture thanks to the local wind called Mistral). Harvested by hand in small boxes. Sorting table is used. 32 hectos per hectare yield
Cold maceration at 10°C for a week. 80% destalked, 20% whole bunches. The grapes are crushed. Alcoholic fermentation in concrete tank for 1 month (at 25°C) using natural, indigenous yeasts. Temperature is controlled every day when the density is checked. Cuvaison for 8 days. 6 remontages and 5 pigeages during the alcoholic fermentation. Pressed by a pneumatic press. The press wine is incorporated. Aged for 18 months in 5 year old foudres (medium heat). Two racking. No bâtonnage, no collage and no filtration. Only one bottling in May done by a service provider. Between 12.000 bottles produced on average
