    This is Guillaume’s top cuvée of Cornas from 33 year old vines planted on the steep exceptional hillside of Chaillot. Following Robert Michel’s path, the grapes were not destalked and the wine has been aged in two thirds 400 litre barrels and bottled without fining or filtration. A natural, very unforced elegance here with attractive rich, irony, blackcurrant fruit, touch of spice and hint of menthol, good substance and extremely long on the finish. For drinking now to 2026.

Terroir
Granite with limestone and clay. South and South-east aspect on 50% hillside, 200 mtrs above sea-level
Viticulture
Debudding. Carries out vendanges en vert. Working the soil. No chemical herbicides or pesticides. Harvested by hand. 35 hectos per hectare yield
Vinification
No destalking. The grapes are lightly crushed. Alcoholic fermentation in 50hl concrete tank. Fermentation for 10 to 15 days (at 18°C) using natural, indigenous yeasts. Daily pigeages, 2 or 3 remontages per day. 7 to 10 days cuvaison then pressed and put into oak. The press wine is blended. Aged for 18 months in old 600L barrels. No filtration and no collage. Only one bottling in April. 6000 bottles produced on average
