    Grown organically in a sandy, granitic topsoil overlying granite, this comes from a selection of old vines up to 80 years old.  On the nose you find spicy cherry and raspberry fruit, then the palate has good structure for a gamay, with the irony, stony mineral quality typical of vines grown on granite, and ripe, old vine tannins on the finish. For drinking now to 2020.

100% Gamay Saint Romain. Selection massale from very old vines on 3309 rootstock. 45 yrs old on average. 5,000 vines per hectare in cordon de royat formation.
Granite (granitic arena) on 15% hillsides, East facing. 420m above the sea-level. Depth of soil is 40cm.
Organic certification with Ecocert© and Biodynamic practices. Debudding but no vendanges en vert. Leaves grass to grow between rows. Works the soil under the rows. The soil is ploughed from spring to autumn. Sulphur, copper and infusion of plants against oidium and mildew. Only cow manure is used during Spring as a fertilizer. Manual harvest. Table de trie. Yield of 24hl/ha.
No cold pre-fermentation maceration. 65% destalked. Grapes are not crushed. 70hl tronconic cement cuve for fermentation. Indigenous yeasts. No chaptalisation. Fermented at 29°C (max 32°C) for 8 days. Temperature is controlled by using flags. Two remontages per day and no pigeages during alcoholic fermentation. 5 days cuvaison with just one remontage per day. Uses a pneumatic press. Press wine is blended with free-run juice. Racked twice. Aged for 7 to 11 months. Light filtration. Two bottlings made by a service provider, usually in June/July. Bottled on a fruit day according to the biodynamic calendar. 8000 to 10000 bottles produced on average.
