    In a normal year Bertrand makes just 3,000 bottles of this excellent wine from 45 year old vines in a fine lieu-dit on a plateau with soils of deep gravels overlying limestone. Organically certified, the wine was cuve aged to retain all its fruit, has a dark raspberry colour, some spice on the nose and sappy cherry fruit, fine grained tannins and is very clear cut with a saline mineral quality on the finish. For drinking now to 2020.

Grape
Cabernet Franc. 40 year old vines. Trained single guyot. 4500 vines per hectare.
Terroir
Flat aspect. Deep gravels soil. 40m above sea-level.
Viticulture
Debud, no green harvest. Leave grass to grow between the rows and roll it. Only one mowing per year. Soil is worked under the row during the vegetative period. Sulphur used against oidium and Bordeaux mix and horsetail used against mildew. No treatments against pests. Occasionally use compost during Winter. Manual harvest with sorting of the grapes in the vineyard. Yield of 20 to 30 h/h.
Vinification
No cold prefermentation. 100% destalked. Grapes are not crushed. Fermented in 40hl stainless steel cuve with natural yeast. No chaptalisation. Fermentation for 2 weeks at 22ºC on average and 28 to 30ºC maximum depending on vintages. Light extraction, with just a few pumping over and crushing (3 to 4 pumping over and 1 or 2 crushing during the fermentation process. Cuvaison up to 8 days depending on ripeness. Vertical press used – press wine is blended quickly with free-run juice. The wine is aged in 40hl stainless steel. Racked once. Aged for 6 months on average. No batonnage, no fining, but filtration by plates at bottling. Bottled 2 times a year in May and September. Produce 3.500 bts a year on average.
