    Etienne’s chardonnay based Crémant is a slightly more complex sparkling wine. Once again the organically tended vines are at high altitude (450m), which helps to preserve freshness and cut (and by coincidence he also sold some of his grapes to top Chablis producer Thomas Pico in 2016 to help make a fine still chardonnay). Low yields and natural yeasts for the first fermentation, the wine is then aged in old demi-muids for six months before being bottled off for the secondary fermentation and 12 months ageing on the lees. Disgorged with zero dosage, this has attactive citrus fruits, a nice saline freshness and gentle bitters on the finish.

11 hectares (2ha for Crémant)
Grape
10 to 25 year old vines. Clonal selection of vines (95 and 96) on SO4 and 41B rootstock. 4500 p/ha. Vines are trained per ‘Guyot’ method.
Terroir
Clay limestone. Soil is 7m deep. 400 to 550m above sea-level. Gradient is 20-35° on south & east facing slopes.
Viticulture
Debudding takes place but no green harvest. Leaves grass to grow naturally in one row every two rows, and ploughing every other row. Sulphur and copper treatments against oidium and mildew. No treatment against pest and insects. Organic animal manure & plant compost fertiliser. Manual harvest. 40 hectos per hectare yield.
Vinification
Pressing with a pneumatic press, settling for 1 to 2 days. Demi-muids for the fermentation. Natural yeasts only. No chaptalisation. Alcoholic fermentation at a controlled temperature of 20°C for 3 weeks. Malolactic fermentation. No racking during the ageing. Aged in 3 to 10 year old 600l futs (light heating). Not filtered. 21 g/l for the secondary fermentation. The wine is kept sur latte under cap for 12 months. Two disgorgements per year. No dosage. The wine is kept for 2 months after being disgorged, before being released. 7000 bottles produced.
