    Macvin is made by adding one third grape marc to two thirds grape juice. The Macle family use their own marc, which is a blend of savagnin and chardonnay and aged for six years - most marcs are a maximum of three year old. You can clearly taste the two grapes in this exceptional example (2009), chardonnay’s citrus fruits, and the richer more structured savagnin with stewed lemons and ripe grapefruit on the nose and more exotic fruit like papaya on the palate. Best chilled with desserts or simply enjoyed by itself at the end of a meal. For drinking now to 2020.

50% Chardonnay and 50% Savagnin. 40 years old vines. Clonal selection (Rupestris) on 3309 rootstock, trained guyot simple and double, depending on the vigour. 6.500 p/ha.
Clay and limestone. 250m above sea-level. 5% gradient with a South-easterly aspect.
Works along the lines of organic viticulture. Debudding but no green harvesting. Leaves grass to grow every other row and plants cereals (oats, barley, vicia). Ploughing during Spring and at the beginning of the Summer. Copper and sulphur used against oidium and mildiou. Organic compost sometimes used. Manuel harvest. 20 hlha yields on average.
Destalks. Long and slow pressing (3h) using a pneumatic press. Settling of the juice for 12 hours. No fermentation. Aged for 4 years in 40 year old 228L barrels. No racking and no batonnage. No fining and light filtration by plates. 1 bottling per vintage in June done by a service provider. Around 3.000 bts produced on average.
