    This wine comes from limestone derived soil on the Saint-Romain side of the appellation. It always has a zesty, grapefruity and citrus character, but has a chalky, stony depth at the same time. For drinking now to 2018.

7 hectares after 2005 vintage. 2500 bts of Auxey produced.
Grape
Chardonnay – 32 yrs old. 10,000 vines per hectare on varied rootstock. Massale selection.
Terroir
Between Petit-Auxey and St Romain. South west slope – very steep, very stony (crumbly) white soil on limestone base.
Viticulture
Severe debudding to 3 to 4 stems off the main branch. Vendanges en vert if necessary. Ploughs 4 to 5 times a year depending on growth of grass. Uses fungicide against oidium. No pesticides or herbicides. Hand harvested100%. Carefully sorted. 50 hectos per hectare yield.
Vinification
Pressed and separated off the gross lees after 1 day. Natural indigenous yeasts. Transferred directly into oak for fermentation. Malolactics completed. Batonnage or no depending upon vintage. Kept in 1st cellar for 12 months at 14º, then racked and moved into 2nd cellar where temp allowed to drop to 5º or 6º which precipitates tartrates and throws the wine clear. 1/6 new to 5 yr old 225ltr barrels for 12 months then 6 mnths in cuve. Racked after 1 years’ elevage on the fine lees. Fined and filtered lightly by kieselghur if necessary. Bottled after 18 months using their own equipment.
