    Made from 34 year old vines from the vineyard of Les Juliennes in Bouzy (whole bunches macerated for 30 hours), and aged half in amphora and half in oak with completed malolactics, this has intensely fragrant strawberries and raspberries with a hint of rose on the nose, and is a seriously vinous (only 3g/l dosage), terroir-driven rosé with an incredibly sustained finish. For drinking now to 2021.

97% Pinot Noir, 3% Pinot Meunier 40 year old vines. 8400 vines per hectare. Massale and clonale selection on 41B rootstock. Vines are trained in Cordon de Royat.
Soils consist of shallow brown chalk. Gentle, south-facing hillside.
Organically certified (Ecocert© in 2007) and bio-dynamic viticulture practiced since 2005. The soil is ploughed and grass left to grow in alternate rows – swaps round every other year. Only 2 out of 60 growers plough in Bouzy. Yield of 9800 kg per hectare.
Vintage 2008-2009. Whole and crushed grapes. Maceration for 18 hours. Natural yeasts. Initial fermentation produced average of 10.9% alcohol. Alcoholic fermentation takes place in temperature regulated stainless steel tanks. No malolactic fermentation; blocked by a cooling process and SO2. One racking process in January 2009. Bottled in February 2010 without filtration. Disgorged in May 2011. Dosage is Extra-Brut (3g/l).
