    This comes from the 2013 vintage and grand cru rated 22 year old vines in Bouzy (80% from the sector of Mont de Tauxières) and Ambonnay where chalk is more present than the cuvée Brut Nature. It was initially aged in two to five year-old barrels, then given over 2.5 years on the lees before it was disgorged in November 2015 with a 4.5g/l dosage. More structured red fruits here, with notes of dried fruits, touch of apricot and citrus fruits, with a saline finish. For drinking now to 2020.

4½ hectares producing 30,000 bts a year in total. 8.000 bottles for this cuvée.
Grape
100% Pinot Noir. Vines planted in 1960, 1980 and 1990. 8.400 vines per hectare. 70% massale selection, 30% clonale (766, 292, 386, 521…) largely on 41B rootstock. Vines trained Cordon de Royat.
Terroir
2 mtrs of limestone-clay soil overlie chalk. Gentle, south-facing hillside. Soil is quite deep in Bouzy and more draining in Tauxières.
Viticulture
Organically certified (Ecocert 2007) and bio-dynamic viticulture practiced since 2005. The soil is ploughed and grass left to grow in alternate rows – swaps round every other year. NB only 2 out of 60 growers plough in Bouzy. Yield of 10.800 kg per hectare.
Vinification
Natural yeasts. Initial fermentation produced average of 10.5% alcohol over last 4 years. All parcels are pressed separately. 30% cuve aged and 70% in 2 to 5 year old barrels. Malos completed. Bottled in Spring with no reserve wine (only main vintage). No racking until bottling. The champagnes have never been fined and since 2006 no filtration either. Spends minimum of 2.5 years sur latte under capsule before disgorging in January with a 4.5g/l dosage (mix of reserve wine and cane sugar).
