    Vaudésir is renowned as one of Chablis finest grands crus and there is very little soil above the limestone. This is made from just 0.30h of 20 year old vines, and was aged in three to six year old barrels. There is an oyster essence on the nose, it is very saline with iodine notes, vibrant and persistent pithy fruit, stylish and complex with a long finish. For drinking now to 2022.

Terroir
Chalk on kimmeridgian limestone.
Viticulture
Debud twice yearly, never carry out vendanges en vert. Uses sulphur against oidium. No chemical fertilisers or weedkillers. Ploughs the soil. Harvests 100% by hand in this vineyard. Vines pruned to ensure never exceeds 45 hectos per hectare.
Vinification
No destalking. Pressing for 2.5 hrs by a pneumatic press, settling of the juice for 24 hrs. Use natural indigenous yeasts. Fermentation at 22°C. Malolactics completed and racked twice. In certain vintages carries out bâtonnage of the fine lees during a 24 months ageing period. Aged in 3 to 6 year old 228L barrels. Fined with bentonite and filtered lightly by Kieselghur. Bottled with their own equipment. 2.300 bottles produced on average.
