    This comes from just 0.32 hectares of 35 year old vines planted high up on the hillside in the sector that can also be called Butteaux. It was aged 60% in cuve and 40% in new to two years old 600ltr demi-muids. A very attractive colour with greeny glints, it is firm and bright on the palate with zesty lemon and grapefruit to the fore, and a mineral, saline infused finish. For drinking now to 2020+.

Grape
100% chardonnay. 35 year old vines. 6.000 vines per hectare on average.
Terroir
Clay and limestone (Argilo-calcaire) soils at 240 meter elevation. South-west facing slopes with a 20% incline and a 1.5 meter soil depth.
Viticulture
Debud twice yearly, never carry out vendanges en vert. Uses sulphur against oidium. No chemical fertilisers or weedkillers. Ploughs the soil. Harvests 100% by hand in this vineyard. Vines pruned to ensure never exceeds 40 hectos per hectare.
Vinification
No destalking. Pressing for 2.5 hrs by a pneumatic press, settling of the juice for 24 hrs. Use natural indigenous yeasts. Fermentation at 20°C. Malolactics completed and racked twice. In certain vintages carries out bâtonnage of the fine lees during a 12 months ageing period. Aged for 70% in demi-muids (600L barrels) and for 30% in stainless steel vats. Fined with bentonite and filtered lightly by Kieselghur. Bottled with their own equipment. 7.000 bottles produced on average.
