    The Garnier brothers buy the grapes for this wine from two parcels in the sectors of Côte de Fontenay and Vaulorent, where the vines are 45yo and 20yo respectively. Aged in one 2yo foudre, it has a chiselled lemon flecked fruit, with saline edge from limestone stamping the finish. For drinking now to 2023.

100% chardonnay. 35 year old vines. 6.000 vines per hectare on average.
Clay and limestone (Argilo-calcaire) soils at 240 meter elevation. South-west facing slopes with a 20% incline and a 1.5 meter soil depth.
Debud twice yearly, never carry out vendanges en vert. Uses sulphur against oidium. No chemical fertilisers or weedkillers. Ploughs the soil. Harvests 100% by hand in this vineyard. Vines pruned to ensure never exceeds 50 hectos per hectare.
No destalking. Pressing for 3.5 hrs by a pneumatic press, settling of the juice for 12 hrs at 13ºC / 15ºC. Use natural indigenous yeasts. Fermentation in 3 year old 25hl foudre, new to 5 year old 6hl demi-muid and 2 year old 228L barrels at 20°C (25ºC max.). Alcoholic fermentation lasts for 3 months. Malolactics completed. No racking. No bâtonnage. Aged for 11 months in 3 year old 25hl foudre, new to 5 year old 6hl demi-muid and 2 year old 228L barrels. Fined with bentonite and filtered lightly by Kieselghur. Bottled in September. Bottling done by a service provider. 6.000 bottles produced on average.
