    This comes from 3.60 hectares of 35 year old east facing vineyards.  Vaillons is initially a firmer structured and more masculine wine than Lechet. Fruit is tightly wound, and there are hints of almond and touch of butter. For drinking now to 2021+.

24 hectares of which 3.5 hectares of 1C Vaillons
100% chardonnay. Rootstock 41B. 50% massal selection – 50% clonal selection (clones 95, 548, 76). 40 years old vines average (50% are 25 years old and 50% are 55 years old). 6000 vines per hectare on average. The vines are trained in double guyot.
Limestone clay, 200 metres above sea level on 25% slopes. South-east aspect. Approx 50cm of soil above the kimmeridgian limestone.
Debud, no vendanges en vert. Mix of methods to keep weeds under control, including ploughing. Copper sulphate against oidium and mildew. No treatments against pests. Tiny quantities of organic fertiliser occasionally used. Mechanical harvest. 50hh yield.
Pneumatic press. Temperature controlled stainless steel vats for fermentation. Use ‘cerevisiae’ yeasts. Allow to settle for 12 hours. No enzymes. Chaptalise by 0.5 if necessary. Ferment at 18°C, for around 15 days. The malolactic is completed 100%. Racked twice during the elevage (also in stainless steel). Aged for 10 months. No batonnage. Fined by bentonite, and filtered by kieselghur. 2 bottlings per year between July and September. Bottled using their own equipment. 25000 bottles produced on average.
