    Franck Pascal pulled out of the Bergerac appellation in 2012 as his rich, natural, unfined and unfiltered wine had little in common with most of the wines from this appellation. His wine spends two winters in the cellars for natural stabilization before bottling. Black and red fruit gradually emerge on the nose, with deep structured fruit on the palate that is held firm by the wine’s chalky minerality backed by delicate tannins. The finish is long and the overall impression is one of freshness. For drinking now to 2020.

Grape
50% Cabernet sauvignon – 40% Merlot – 10% Malbec on 3309 Couderc rootstock. 25 year old vines. 5000 vines per hectare on average. Vines are trained in Cordon de Royat.
Terroir
Calcic Rendosol, at an elevation of 80 metres above sea-level and inclines of 5% facing south. Depth of soil averages 25cm.
Viticulture
Debudding. Don’t carry out vendanges en vert. Earthing-down under the row. Ploughing and sowing green manure in autumn. Work one row in two the rest of the year. No chemical herbicides or pesticides, only organic fertilizers. Organic certification in process with AB©. Partially harvested by hand. 35 hectos per hectare yield
Vinification
100% destalking. No cold soak. Alcoholic fermentation in stainless steel tank. Fermentation for 5 to 7 days (at 22°C) using natural, indigenous yeasts. Cap punching and watering of the marc. Cuvaison 21 days. Pressed by a horizontal press. The press wine is blended. Aged for at least 2 years in a mix of vats and old foudres. Only one racking (two max.). No bâtonnage, no filtration and no collage. 3 to 4 bottlings during the year. 35000 bottles produced on average.
