- 100% Savagnin. 15 to 30 year old vines on 3309C rootstock planted at 5,000 vines per hectare. Trained to “double guyot”.
- Terroir
- Blue marls at a 380 metre elevation. Flat aspect, facing south/west.
- Viticulture
- Debudding. No green harvest; only thinning out the leaves. Works the soil (ploughs every other row). No chemicals used in the vineyard. Copper and sulphur used against oidium and mildew. No treatments against pests and insects. Organic fertilizers (sheep manure) are used during winter. Harvested by hand with a very severe sorting in the vineyard. 40 hectos per hectare yield
- Vinification
- Pressing with stems (using a pneumatic press) and then juice settles for 24 to 48 hours. Start of fermentation at 15°C in stainless steel vats using natural yeast for 2 to 3 days and then rest of the fermentation in 3 to 4 year old 600L barrels. Temperature is controlled. No chaptalisation. Malolactic fermentation is starting in Spring when the cellar gets warmer; it does last for a little while due to the high acidity. During the elevage, the barrels are topped up (‘ouillage’) to minimise oxidation. Élevage in 3 to 4 year old 600L barrels for 10 months without racking or lees stirring (batonnage). One domaine bottling in July without fining but with filtration.
