    30 year old vines here, destalked by hand, and aged for 18 months in 6/7yo barrels. There is a deep spicy fruit and yet at the same time the wine is light and graceful, with notable salinity on the finish. Very limited quantity.  For drinking now to 2020.

Size of domaine
8 hectares (of which Pinot Noir is 0.39ha). Around 30 parcels in total in the villages of St Hippolyte, Hunawihr, Zellenberg, Riquewihr, Sigolsheim and Kientzheim.
100% Pinot Noir. Massale selection on 169/49 rootstock. 40 year old vines on average. 5.500 vines per hectare trained guyot.
Clayey marls from Lias and schist-marls with limestone on a bedrock of sandstone/limestone. Between 250 and 300m above sea-level. South/East facing. Soil is 1m deep.
Certified bio-dynamic viticulture (Ecocert©). Member of Renaissance des Appelations©. Debudding but no green harvesting. Plough 1 row in 2 April to June. Allow grass to grow in the other row until it seeds. Use homeopathic dose of horsetail, nettle and sulphur and very low levels of copper against oidium and mildew. Manual harvest, carefully sorted in the vineyards. 28 hectos per hectare yield.
Grapes are all destemmed by hand. Grapes are not crushed. Alcoholic and malolactic fermentations in 10 year old 228L barrels. Natural and indigenous yeasts only. No chaptalisation. Temperature of fermentation is between 20º and 22ºC. Temperature is not controlled. Alcoholic fermentation lasts for 3 weeks. 2 cap punching during fermentation and 3 pumping over during fermentation. Fermentation and cuvaison last for 1 month. Pneumatic press. Press wine is blended with free-run juice. Aged for 2 years in 10 year old 228L barrels, with no racking. No batonnage, no fining and no filtration. Bottled in August. 800 bottles produced in total. SO2 kept at minimum level and only at bottling.
