    Spiegel gives a denser more tightly wound riesling than Saering, that gradually reveals its incredible qualities. There is more clay in the vineyard here, and an easterly exposure, which according to Jean help to make this such a long-lived riesling. Anyone looking for a world class dry riesling, with a good cellar and a little patience would be amply rewarded by this wine. For drinking now to 2029+.

100% Riesling. Massale selection on 3309 rootstock. 5800 vines per hectare. Vines planted in 1964 and 1977 trained double-guyot
South 20% slope. Clay and sandstone. 1m above sandstone mother rocks. 300m above sea-level.
Bio-dynamic viticulture. Soil ploughed 4 to 5 times a year. Old wood not pruned off until March. But and debut the vines during the winter. Debud but never vendanges en vert. Use sulphur and homeopathic dose of the plant ‘horsetail’ against oidium. Use Bacillus Thurengiensis against pests. Never use fertiliser, only a touch of limestone if necessary. Manual harvest with careful selection carried out. Yield 45 to 50 hh.
Pneumatic press. Natural, indigenous yeasts. Vinified in stainless steel at 18°C average for 2 months. Racked once at the end of alcoholic fermentation. Touch of sulphur added to prevent malo-latics. Stainless steel for elevage (9 months). Plaque filtered then bottled using their own bottling machine. 2200 bottles. Certified both organic and bio-dynamic (Biodyvin©).
