    The 20 year old bio-dynamically tended vines are planted to the west of Saering near Kitterlé with a south-east aspect in a sandy marl with limestone deep below. The wine has a beautiful colour with greeny glints, and the nose is restrained and mineral. The palate is mouthwateringly pure and sapid with lemon and lime-zest, a hint of ginger and spice, and a saline note on a finish that keeps on going. For drinking now to 2020.

100% Riesling. 0.54h from massale selection, 0.45 clone 49 on 3309 & Riparia rootstock. 5700 vines per hectare. 5 and 22 year old vines trained double-guyot
Terroir
South-east 15% slope. Decomposed marl, limestone and sandstone. 0.60m to 1.20m above lime and sandstone mother rocks. 280m above sea-level.
Viticulture
Bio-dynamic viticulture. Soil ploughed 4 to 5 times a year. Old wood not pruned off until March. But and debut the vines during the winter. Debud but never vendanges en vert. Use sulphur and homeopathic dose of the plant ‘horsetail’ gainst oidium. Use Bacillus Thurengiensis against pests. Never use fertiliser, only a touch of limestone if necessary. Manual harvest with careful selection carried out. Yield 50 hh.
Vinification
Pneumatic press. Natural, indigenous yeasts. Vinified in stainless steel at 20°C average for between 3 weeks to 2 months. Racked at the end of alcoholic fermentation. Touch of sulphur added to prevent malo-latics. Old wooden foudres for elevage (9 months). Plaque filtered then bottled using their own bottling machine. 2200 bottles produced in 2005, progressively more for later vintages as young vine produce is incorporated. Certified both organic and bio-dynamic.
