Cuve aged, this wine has a very silky texture, with scrumptious wild strawberry, raspberry and violet fruits and a purity (no sulphur) that just keeps you wanting more. For drinking now to 2020.

6.8 ha in total (6 ha in lieu-dit Moulin à Vent, 69460 Saint Etienne des Oullières, and 0.8ha in Salles Arbuissonnas) of which this cuvée is 1.5ha.
Gamay planted at 10,000 vines per hectare on 3309 and Viallat rootstocks. 50 to 60 year old vines trained gobelet.
Granitic sand. 320m above sea-level. Flat aspect with a South – South/East aspect. Depth of the soil is 50cm.
Certified organic by Ecocert® since 2007. No debudding and no green harvest. Ploughing and mowing 3 to 4 times a year. Bordeaux mix, sulphur and seaweed are used against mildiou and oidium. No chemical fertilisers or weedkillers used. 100% manual harvest with sorting of the grapes in the vineyard. Yields are around 30 hl/ha.
The entire grape bunches are vinified in concrete vats. Fermentation with indigenous yeasts only and no chaptalisation or S02. The grapes are cooled to between 10°-15°C for 8 days. The fermentation starts of its own accord in the juice at the bottom of the cuve. There is no remontage or pigeage, and during the alcoholic fermentation the temperature picks up to max of 20°C. It is a true maceration carbonique. Alcoholic fermentation for 15 days and total cuvaison of 6 months. The press wine is assembled. On average the wine spends 6 months in concrete vats. 1 or 2 rackings during elevage. Light filtration by Kieselghur, only if needed, Only one bottling per year in February done by a service provider. 5.000 bottles produced on average.
