    In just his late twenties Etienne Fort makes brilliant sparkling wines by the methode traditionelle (the same as for champagne), from the best parcels of 11 hectares of organically worked vines in the high altitude (450m) limestone based foothills of the Pyrénées. Aged for six months in cuve, then a year in bottle, and disgorged with no dosage, this exceptional value fizz has a fine bubble, and refreshing zesty fruit.

40 year old vines. Limoux and Gaillac massale selection, 41B rootstock. 5000 p/ha. Vines are trained per ‘Gobelet’ method.
Clay limestone. Soil is 7m deep. 450m above sea-level. Gradient is 20-30° on north & south facing slopes.
No debudding or green harvest. Leaves grass to grow naturally in one row every two rows, and ploughing every other row. Sulphur and copper treatments against oidium and mildew. No treatment against pest and insects. Organic animal manure & plant compost fertiliser. Manual harvest. 40 hectos per hectare yield.
Pressing with a pneumatic press. Settling of juice for 24 to 48h. Stainless steel vats for the fermentation. Natural yeasts only. No chaptalisation. Alcoholic fermentation at a controlled temperature of 20°C for 3 weeks. Malolactic fermentation completed. No racking during the ageing. Aged for 6 months in cuve. No reserve wine used. Not filtered/fined. 21 g/l for the secondary fermentation. The wine is kept sur latte under cap for 12 months. Usually, two disgorgements per year. No dosage. The wine is kept for 2 months after being disgorged, before being released. 7000 bottles produced.
