    Ludwig produces this very elegant, subtle chardonnay from 30 to 55 year old vines on an exceptional terroir sited on a lower southerly hillside in the Château-Chalon AC village of Voiteur where there is a limestone layer in the subsoil rich in marine fossils at a point where younger Lias marls change to Triassic marls. Aged for 18 months in five to twelve year old topped up barrels, on the nose there is a hint of almond and it’s notably saline. The palate is complex with hints of white peach, apricot, aniseed, menthol (often the mark of the best terroirs), you don’t notice any oak, and the finish is clear cut and saline. For drinking now to 2020.

Grape
100% Chardonnay à Queue rouge. Vines planted in 1957 from massale selection. Trained guyot simple.
Terroir
Very complex terroir: layers of marls and strats of limestone (Trias). West facing.
Viticulture
Works along the lines of organic viticulture. Ploughs the soil. Copper and sulphur used only. Manuel harvest. Low yields.
Vinification
Very long, slow pressing (8 hours; light maceration under the press). Small amount of SO2 added at pressing (i.e. 2 g/hl). Settling of the juice for 24 hours. Transferred into 5 to 7 year old 225L barrels (from Sylvain Langoureau in St Aubin). The juice is poor in azote and the temperature of the cellar is naturally very low so the fermentation is very long (1 to 2 years). Only natural yeasts are used. Malolactics partially completed. 2 to 4 years élevage on fine lees in 5 to 7 year old 225L barrels (33 months in total for the 2011). SO2 at bottling only if necessary (very small amount anyway as the wine is stable after such a long élevage).
