    This comes from a half hectare of 40-45 year old vines situated just below the 1er Cru of Clos des Sorbets. The vines are sited on an easterly facing 25° slope to the west of the main road (where all the best village sites are found). Cécile doesn’t like rustic MSD, and this wine has superb balance, a well-defined blackberry and cherry fruit, well-integrated fine tannins and mineral note. Very limited quantity. For drinking 2017 to 2023.

Size of domaine
3 hectares of which MSD ¼ hectare. The holdings are mainly from her maternal grandmother (Noellat). Cécile is also the grand niece of Henri Jayer.
100% Pinot Noir, 40 to 45 years old (1 parcel of 30 yrs and the other 52 yrs old). The vines are trained cordon de Royat and planted at 10,000 vines per hectare.
Easterly facing 25% slope to the west of the main road, and just south of the cemetery. All the best MSD site are to the west of the RN. Just below the 1er Cru Clos des Sorbets. 50cm of limestone-clay above limestone mother rock.
Ecocert organically certified but have always practiced, bio-dynamic viticulture. Prune old branches off in March when sap is down completely. Plough 4 times from spring to mid-July, stopping at veraison. Debud but never carry out vendanges en vert. Use Bordeaux mix against oidium and mildew. No insecticides. Sometimes use a little compost. Always looks for maximum phenolic ripeness. Grapes sorted carefully by hand in the vineyard and then again with a table de trie in the cave. Large team of harvesters employed. Yields vary enormously but in a normal year are between 30-35 hectos per hectare.
Destemmed 80% though this varies widely from year to year, dependent on the ripeness of stalks. 2 pigeages and 2 remontages during 4 week cuvaison. No pumps. Press wine vinified and aged apart. Use vertical press. Aged in oak for 1 year where malolactics take place. 20% new, 20% x 1 yr old, 20% x 2 yr old, 40% x 3 yr old barrels. Sometimes racked, sometimes not. No fining, no filtration. Bottles herself in November as nothing to gain from a longer elevage.
