    Clear, mid colour, shows a gentle touch with extraction. The vines here are 30 to 40 years old. The wine has an extra depth and complexity, intense red fruit flavours, and is stylishly fashioned with real allure. For drinking now to 2021+.

Grape
Pinot Noir on 161-49 root-stock. Carefully selected fine clones and massale selection from the domain. Training is guyot and cordon de royat, average vine age is 40/45 years and plant density is 10,000 to 12,000 vines per hectare.
Terroir
Limestone and clay (Argilo calcaire). East facing slopes with 10% gradient at 250 metre altitude. Soil depth is 50cm.
Viticulture
De-buds and occasional green-harvest. Plough the soil in the winter and spring with 2-3 in between. Rows are not grassed at the moment. Use copper to combat mildew and sulphur for oidium. ‘Confusion sexuelle’ to stop pests regenerating. Organic compost when required. Manual harvest and then use a vibrating sorting table (table de trie) to eliminate imperfect fruit. Yield of 40 h/h
Vinification
Grapes are 70% to 100% de-stemmed but not crushed prior to a pre-fermentive maceration for 6-7 days at 10 to 12°C. Fermentation with natural yeasts (at 30 to 35°C) lasts for around 8 days in temperature controlled stainless steel cuves. Chaptalisation by 0.5 degrees if needed (depending on vintages). There will be around 12 pigeages and 5-6 remontages during the fermentation. Press wine (Pneumatic) is added straight back to the assemblage. A 16-18 month élevage in light toast barrels (1 to 6 years old) with occasionally batonnage. Racked once after 12 months and once before bottling. No fining but a light filtration. One domaine bottling in March using natural cork. Organic certification from the 2007 vintage. Production between 5000 and 6000 bottles.
