    This is the newest cuvée made by Aurélien from old vines planted in limestone clay soil, and has been made from 60% 2014 and 40% 2013, with 60% white wine, 30% rosé de maceration and 10% red wine all from meunier grapes. It was disgorged in July 2016 with a 2.5g/l dosage. It is a beautiful rosé with incredibly attractive delicate red fruits, a touch of pepper and a saline freshness on the finish. 94 points Antonio Galloni. For drinking now to 2018.

Grape
Vines between 15 to 65 years old. Massale selection from family vineyard on 41B and 3309 rootstock, 8,500 vines per hectare, trained vallée de marne et cordon de royat.
Terroir
Clay and hard limestone, some flint. 180m above sea level. East and south aspect on 5° to 35˚ slopes. Soil is 30cm to 1.5m deep.
Viticulture
Debud, no vendanges en vert. Soil ploughed with a crawler and a tractor from spring to July. Allow grass to grow from the beginning of July, cutting it back only when it becomes too vigorous. Copper and sulphur are used against oidium and mildew. Organic compost used during winter. Manual harvest. Yields are 30 to 65hh depending on vintages.
Vinification
Traditional Coquart press. 15 hours of settling of the juice. Natural indigenous yeasts only. 1st fermentation has given an average of 10.5% alcohol, so just a touch of chaptalisation necessary. Vinification in 5 to 15-year-old barrels at 12°C-20°C for 14 days up to 3 months. Partial malolactic fermentation. Elevage on fine lees for 7 months. Racking during elevage. 50% of the previous year’s wine is used as reserve. The wine is filtered. 24g/l of sugar used for the secondary fermentation. 24 months sur latte. 2.5g/l of MCR used for dosage. Diam corks. Kept in cellars for further 6 months post degorging. 14,000 bottles produced.
