    A delicate salmon pink, this champagne comes from the 2013 vintage and was aged in a mix of stainless steel and barrels. 15% pinot noir still wine from Orizeaux was assembled to give the colour and it was disgorged in Jan 2017. It is a very elegant rosé, with nuanced, layered red cherry and redcurrant fruit, underlined by subtle notes from the soil. The dosage of 6g/l suits perfectly.

Terroir
Sand, clay and limestone, 5m above the mother rocks. 170m above sea-level. Soft chalk 30cm beneath. South-east aspect on 5 - 10% slope.
Viticulture
Debud, no vendanges en vert. Soil ploughed for last 4 years. Uses a horse to plough in the parcel of Chardonnay. Allow grass to grow, cutting it back only when it becomes too vigorous. Renowned soil specialist Claude Bourguignon is employed to analyse the soils yearly, judge the activity of micro-organisms in the soil and advise on any organic treatments. Manual harvest. Yields average 50 hh.
Vinification
Pneumatic press. Natural indigenous yeasts. Vinification in stainless steel at 18°C-20°C for a month. The chardonnay and the pinot noir undergo malolactics. Elevage on fine lees for 9 months. No racking. 2010 vintage only (15% pinot noir still wine from Orizeaux was assembled to give the colour). From 2006 onwards, the wine is neither fined nor filtered. 24g of sugar used for the secondary fermentation. 3 years sur latte. 5 g/l dosage. Dosage with MCR. Kept in cellars for further 4 months post degorging. 5000 to 10000 bottles produced on average.
