    This comes from vines in seven villages, including the grands crus of Avize and Cramant. Blended from the 2013 and 2012 vintages and given over two years sur lattes, the dosage of 7g/l is well judged, helping to emphasize its driving fruitiness and minerality. It is a perfect example of how a good non-vintage balances character and authenticity with sheer, delicious drinkability. For drinking now to 2019.

Domaine comprises 62 parcels of vines totalling 9.75 hectares. Majority of wines in grand cru villages of Avize, Cramant, Oger and Oiry.
90% Chardonnay, 10% Pinot Noir. Selection massale on 41B rootstock. Tends to be younger vines from grand crus. Average age 35 years.
Vines in Avize, Cramant, Oger, Oiry, Avenay Val d’Or, Bergères les Vertus and Mardeuil.
Pascal not interested in being tagged ‘organic’ or ‘biodynamic’ but does feel that it is important to work according to natural rhythms and sensibilities. No chemical pesticides or weed killers ever used. All of the vineyards are ploughed. Pascal attaches great importance to the proper technique and timing of pruning to control vineyard maladies. Some homeopathic treatments also used in the vines to control pests. Manual leaf thinning, manual harvest. Yields around 60hh.
Usually produce 11% natural alcohol; never chaptalises. Champagne made from blend of 2 years – the most recent is 100% aged in cuve, the older year is aged 50% in cuve and 50% in aged demi-muids 5-40 yrs old (so quarter oak aged in total). Grapes pressed with a traditional coquard vertical press and ferments with natural yeasts. Malolactics completed 100%. The wines are traditionally bottled around the full moon of May with no fining, filtration or cold stabilisation. 24g of sugar for secondary fermentation. Minimum period of 21 months sur latte (under capsule). Dosage comprises wine and cane sugar – make their own liqueur. Total S02 50mg/litre. Dosage 7g/l. Produces 50,000bts.
