    A new cuvée from Bertrand, this is a real rarity in Champagne being a 100% Pinot Blanc (we also stock a few cases of Cédric Bouchard’s la Bolorée) from the 2015 vintage. It comes from the south facing vineyard of Fonnet in Buxieres where the vines are 20yo. Aged in large Georgian amphora and older barrels, it is a most attractive champagne with a good weight of fruit balanced by a salty mineral quality with a distinct herbal note. Zero dosage. As Bertrand warns on the label, ‘peut entrainer une euphore passagère’! For drinking now to 2021.

20 years old vines. Massale selection, 41B rootstock
Kimmeridgian clay and limestone. South-east facing vineyard, with 12˚ slope at 250m above sea level. Soil is 40cm deep.
Certified organic (AB®) and certified biodynamic (Demeter®) since 1998. Debudding and green harvest occasionally. Ploughing in late spring. No herbicides or pesticides. Organic treatments against oidium and mildew. Manure used in the autumn. Manual harvest. 5 to 50 hectos per hectare.
Pressed by Coquard press. Natural indigenous yeasts only used. First fermentation with no chaptalisation and last for 10-20 days, at 19˚C, in buried Georgian dolia. Temperature is controlled geothermally. The wine is aged for 10 months in subterranean dolias, with grape berry. No racking. Neither fined nor filtered. 24 g/l of sugar for second fermentation. Aged under cap for 20 months. Disgorged with no dosage. Keeps the wine for 6 months to 1 year in underground cave before release. 1,800 bottles produced.
