    This is a very thoughtfully made white, 90% aged in cuve and the balance in two new barrels. Sulphur, which can often be the bane of Pessac whites, is kept to a minimum. A very pale gold colour, it has peach flesh on the nose, citrus fruits on the palate, and is very harmonious with a subtle stamp from the complex terroir, which leaves stony, saline notes on the finish. At its best after 5 years from vintage per François Boutemy. Very limited quantity. For drinking now to 2024.

Gravely soil on a clay-limestone base, 44 mtrs above sea-level. Flat aspect. Depth of the soil is 2m approx.
The vineyard is ploughed 100% in autumn and also spring. Debud and carry out vendanges en vert when necessary. Doesn’t leave grass to grow between the rows. Conventional treatment against oidium and mildiou. Organic compost after harvest. Hand-harvest. Use a sorting table. Yield 53 hectos per hectare on average.
Destalked. Pressing for 1.45 hrs by a pneumatic press. Cold settling of the juice for 24h. Fermentation in stainless steel at 19°C to 21°C, using selected yeasts. Alcoholic fermentation for 10 days. No malolactic fermentation. Aged for 8 months in stainless steel vats mainly (only 8 % in new 225L barrels, medium toast). Bâtonnage on fine lees adapted to the wine and the vintage. No racking. Collage and filtration. Only one bottling in June done by a service provider. 7.000 bottles produced on average.
