    Produced by the same winemaker as the Château Moutin, this comes from two hectares of 30 year old vines in the lieu dit of Rouquette. Harvested at 45hh and cuve aged it is precise, focused and clean and offers lovely varietal sauvignon fruit with that little extra backbone of structure from the semillon.

Grape
80 % Sauvignon Blanc and 20% Semillon planted single guyot. Sauvignon are clones 108 and 317, on 3309 and 101-14 rootstock. Average age 30 years with plant density of 5,200 vines per hectare.
Terroir
Gravelly hilltop. Limestone mother rock – clayey and gravelly soil to a depth of 60 cms. Vineyard facing south / south-west with a 10% gradient. 102 m above sea-level.
Viticulture
No de-budding or green harvesting. Manually removes the unwanted new shoots twice a year. Leaves grass to grow every other row. Ploughs at the end of January. Oidium prevented with flowers of sulphur. Mancozebe and Folpel based products are used against mildiou. Organic compost used every three years. No treatment used against pests unless authorities demand. Mechanical harvest and no table de trie. Yield of 45h/h.
Vinification
Press for 2h30 (under nitrogen) with a pneumatic press. Settling of the juice for 12 hours. Alcoholic fermentation for 10 days, in stainless steel vats, between 14°C and 16°C, using Zymaflore yeasts and Lafazyme enzyme. Temperature for fermentation is controlled. No chaptalisation and no acidification. Malolactic fermentation is blocked. Aged on fine lees in stainless steel vats for 6 months. Light batonnage. No racking. Fining with bentonite. Only one bottling at the end of March done by a service provider. 12.000 bottles produced on average.
