Champagne Blanc de Blancs Grand Cru AC 2004 Extra-Brut Mineral Agrapart & Fils (£34.96 exc VAT)
as one of his best wines for outdoor dining: "Summer's frivolous fizz is well and good, but every now and then I crave something intellectual. This is vinous and textured (without being heavy) but has mineral, salty elements that really mark the palate. This is an extraordinarily serious wine that happens to be fizzy. Drink it with the finest chicken."
