    Eric has just 0.85 hectare of massale selected white grapes, and whilst the vineyard is relatively young, his yields are just 16hh. He also harvests at 7am in the morning to preserve freshness. Aged for one year in two to four year old barrels, the wine is complex and dense but has retained an integral freshness and balance, with intriguing aromas of white fruits and flowers. For drinking now to 2020.

Terroir
Mainly limestone and clay; pebbles, iron oxide, 110 mtrs above sea-level
Viticulture
Debudding. Carries out vendanges en vert. Ploughing in Spring, hoeing at the beginning of the summer depending on the weather. Leave grass to grow naturally throughout the vineyard. No chemical herbicides or pesticides, only organic fertilizers; mainly compost during winter. Organic certification in process with Ecocert©. Harvested by hand. 16 hectos per hectare yield
Vinification
Pressing for 3 hrs by 22 hl Vaslin press, settling of the juice for 24 hrs. Fermentation in second hand 500L barrels (at 18°C to 23°C) using natural, indigenous yeasts. Alcoholic fermentation for 4 weeks average. The wine naturally carries out its malolactic fermentation. Aged for 11 months in 500L barrels of 2 to 4 wines medium toast. Bâtonnage on fine lees at the beginning. No collage and light filtration adapted to the wine. Only one bottling in August. 2000 bottles produced on average
