    Jérôme Grieco’s CNDP comes from old vines in a mix of limestone-clay, deep red clays and typical ‘galets roulés’ river stones. He aims to produce an authentic but easily drinkable wine, and so this is a wine blessed by clarity of fruit expression and none of the souped up sweetness so prevalent in CNDP today. Cuve aged, it offers a mix of spicy red and black fruits, touch of menthol and garrigues herbs, and a long finish featuring fine grained tannins. For drinking now to 2021+.

Terroir
Essentially mix of clay and limestone. Various parcels with various exposition.
Viticulture
Organic fertilisers added for the first time in 2011. Ploughs the soil from April to beginning of July. Debuds but no vendanges en verts. Copper and sulphur are used against oidium and mildew. Sexual confusion or organic insecticide used against pest and insects. No herbicides. Manual harvest with sorting of the grapes in the vineyard. 25 hectos per hectare yield on average.
Vinification
Does not destalk. The grapes are not crushed. Natural indigenous yeasts only. No cold soak. Mostly ferments at 25°C max. Alcoholic fermentation for 5 days. 2 to 3 délestages and light remontage to humidify the cap. 10 day cuvaison. Press wine aged separately and blended at the end, depending on vintages. Racked once after alcoholic fermentation and then not touched. Bottled by contract bottler in July after 10 months with light filtration by plates and no fining. Cuvaison and elevage all in cement tank. 8.000 bottles produced on average.
