    Jérôme Grieco’s top cuvée of CNDP comes from 76yo old vines planted in sandy soils on a north facing hillside towards Orange. Not destalked and cuve aged, it has an excellent dark cherry colour that extends right out to the edge, is denser and has more matter than the normal cuvée, liquorice, menthol and clove notes on the palate, and has a long sustained finish and perfectly judged tannins. For drinking now to 2020+.

Grape
100% Grenache. 80 year old vines trained gobelet.
Terroir
Essentially mix of sand and clay. North-West aspect.
Viticulture
Debuds and vendanges en verts. Ploughs the soil from April to beginning of July. Copper and sulphur are used against oidium and mildew. Sexual confusion used against pest and insects. No herbicides. Compost used during Winter. Manual harvest with sorting of the grapes in the vineyard. 20 hectos per hectare yield on average.
Vinification
No cold soak. Does not destalk (keeps the whole bunches). The grapes are not crushed. Selected yeasts. No chaptalisation. Mostly ferments at 25°C max. in concrete vats. Temperature is controlled. Alcoholic fermentation for 5 to 6 days. 21 days maceration with whole binches. 1 remontage per day to humidify the cap. 3 weeks cuvaison. Press wine is not used. Racked once after alcoholic fermentation and then not touched. Bottled by contract bottler in August/September after 12 months with light filtration by plates and no fining. Cuvaison and elevage all in cement tank. 2.000 bottles produced on average.
