    This comes from 30 year old vines planted in alluvial and clay soil overlying limestone, on a south-east facing hillside . It is a light, zesty wine, with hints of celery, quite saline and has a chalky lift on the finish. For drinking now to 2018+.

Grape
100% Jacquère – 30 yr old vines. Rootstock 3309. 8.000 vines per hectare. Trained guyot simple.
Terroir
Silty soil. 300m above sea-level. Gradient around 20% on South-East facing slope.
Viticulture
Practiced bio-dynamic viticulture since 2006 and certified Eco-cert© (organic). Ploughs and hoes the soil. 4 to 5 bunches of grapes per vine, or 40 to 50 hectos per hectare. Debuds, but never vendanges en vert, and leaf thins towards the end of August, looking for maximum aeration of the grape bunch. Hand harvested.
Vinification
Long 4 hours pressing with a pneumatic press. Leaves the juice to settle for 48 hours after pressing. Uses minimal sulphur dioxide. Indigenous natural yeasts, no chaptalisation, and the wine is neither acidified or de-acidified. Cuve fermented at 18°C for 4 weeks. Gravity rather than pumping. Malolactic completed 100%. No racking. Aged for 6 months in cuve. Stays on the fine lees until April then fined and filtered. Bottled according to the lunar cycle in April or May. 2.000 bottles produced.
