    40 year old vines here, planted at high altitude (400m) on steep schist based hillsides.  A perfectly balanced weight and tension, with smoky notes on the nose, very frank and pure on the palate, with ripe lemony fruit, and intense mineral character (hot stone and saline) that really tugs on the salivary glands.  For drinking now to 2018.

Grape
40 % Chardonnay - 40% Jacquère - 20% Mondeuse Blanche. For Mondeuse blanche, massale selection from St Pierre de Soucy on 3309 rootstock. For the rest, clonal selection on 3309 rootstock. 40-year-old vines. 5000 vines per hectare, trained guyot.
Terroir
Clay on sedimentary schist (120 million years old). Westerly aspect, 30% slope. 400m above sea-level. Depth of the soil is 1.50m.
Viticulture
Debudding but no vendanges en vert. Practiced organic viticulture and certified Eco-cert©. Works the soil between the rows. Leaves the grass to grow every other year. Uses horsetail and nettle against oidium and, Bordeaux mix and copper against mildiou. Uses organic compost (manure) during the Autumn. Hand harvested with sorting of the grapes in the vineyard. 40 hectos per hectare yield.
Vinification
Not destalked. Slow pressing for 4 hours using a pneumatic press. Light settling of the juice for 24 hours. Alcoholic fermentation for 1 to 6 months in fiberglass vats. Uses natural yeasts. Chaptalises by 0.5 to 1% alc. with Jacquère and Mondeuse Blanche if needed. Temperature for fermentation is checked on a regular basis in the vats and is between 18°C and 20°C max. Malolactics are completed. The wine is aged for 9 months in vats and in 5 to 10 years old 228L barrels (low heat) only for Chardonnay. Light batonnâge at the beginning and no racking. Light tangential filtration; no fining. Only one bottling per vintage. 10.000 bottles produced on average.
