    40 year old vines, organically tended, here give a yield of just 27hh. This rosé is a very attractive onion skin colour with red fruits, fennel, garrigue herbs and a hint of spice. For drinking now to 2023+.

Terraces (‘Restanques’) with clay and limestone soils, very well drained. 150 mtrs above sea-level. North-East and South-East aspect on 27% slopes. Soil depth 1.2m approx.
Debudding. Carries out vendanges en vert in July. Mechanical weeding. Plough several times during the year; do not allow the grass to grow during Spring and Autumn. No chemical herbicides or pesticides, only organic compost once a year. Bordeaux mixture against mildew and sulphur against oidium. No treatment against pest (very low level of moisture thanks to the local wind called Mistral). Organic certification by Ecocert©. Harvested by hand in small boxes. 38 hectos per hectare yield
100% destalked. The grapes are crushed. Alcoholic fermentation in enamelled tank and stainless steel for 8 days (at 21°C) using natural, indigenous yeasts. Temperature is controlled every day when the density is checked. Pressed by a horizontal press. The press wine is kept separate until the end of the fermentation and then blended. Aged for 6 months in stainless steel. Three rackings. No bâtonnage and no collage; just a light filtration. Only one bottling in April. 15000 bottles produced on average
