    This comes from 4½ hectares of vines averaging 50 years of age.  There is just 30cms of pebbly topsoil then a 1.25m bed of broken up stones overlying Bathonian limestone.  Yields are low (just 34hh in 2011) and the wine was vinified then aged for a year in older oak, followed by a further six months in cuve. The balance of this wine is excellent, it has very natural, ripe but zesty citrus fruit tethered by an insistent mineral undertow and you don’t notice oak at all. For drinking now to 2018.

Grape
100% Chardonnay with average vine age of 40 years and at a plant density of 9,000 vines per hectare. Local selection massale from the domain and on various rootstocks (3309, SO4, Riparia). Trained to guyot ‘arcure’ which involves arching canes to improve distribution of sap.
Terroir
Soil is silty-clay limestone (Argilo calcaire) at a 350-400 meter elevation, north east facing with 5% to 30% slopes. Depth of soil is 15-20cms
Viticulture
De-buds and no green harvesting. Short pruning to reduce yield. Plough 4 to 5 times a year between rows. Doesn’t leave grass to grow. Sulphur, copper, nettle infusion and extracts of citrus fruit used to prevent mildew and oidium. No herbicides or pesticides. Organic compost or fertiliser. Highly selective manual harvest. Yield of 45 h/h
Vinification
Pneumatic press for 2 to 3 hours with no de-stemming followed by 48 hours settling of the juice. A 2 to 6 months fermentation between 12°C and 23°C in 10 year old 30hl foudres and 6 to 10 year old 228L barrels with natural yeast. No chaptalisation. Full malo-lactic. An 18 month élevage in vats. One racking per year. No fining and Kieselguhr filtration. First of 2 bottlings in April. Natural 49mm cork. Production 15 to 20.000 bottles.
