    This cuvée is made from three hectares of organically tended vines planted in a soil of limonite, comprising iron ore and its related minerals. It has an attractive marine, sea breeze quality on the nose, succulent fruit and a sustained finish. For drinking now to 2022.

Melon de Bourgogne, 30 years of age and trained single guyot. Root stock 3309. Density 6,500 vines per hectare. Clonal selection.
Gneiss. Soil depth is around 50cms. Altitude 60 metres, facing east, south and SW with a 15 % slope.
Organic viticulture certified by Ecocert©. De-bud but no green harvest. Works the soil by regular ploughings. Sulphur used against oidium and copper against mildew. Treatment against pests using Bacillus Thuringiensis (permitted in organic viticulture). No fertiliser used; only organic manure. Machine harvested. Yield of 45 H/H.
100% destalk. Pressing for 2 hours followed by a settling period of the juice for 18 hours. Fermented in stainless steel vats at 17ºC for 20 days, using natural, indigenous yeasts. Temperature is controlled using a heat-pump. Pneumatic press. Racking on fine lees just after the alcoholic fermentation and then, lees stirring for 2 months, during November and December. No malolactics. Left on lees until bottling. No racking during élevage, filtered by plaque. Bottled only once per vintage in September after 10 months, using their own equipment at the domaine. Total production: 16,000 bottles.
