    This comes from low yielding 50yo grolleau planted in a good terroir where clay, sand and limestone are mixed overlying a schist base. Fermented traditionally from whole bunches and aged in older barrels for a year, this has delicious cherry and wild strawberry aromatics and flavours with much more depth of fruit than most examples. No sulphur. For drinking now to 2021.

Size of domaine
14.20 hectares in total, of which this cuvee is 1.40ha.
Grolleau, 50 year old massale selection on Riparia rootstock. 5.000 vines per hectare, trained gobelet. The vines are trained 2 metres high.
Plain, flat aspect. Sand and clay with falun (i.e. limestone from marine origin called « calcaires coquilliers ») on schist motherock. 40m above sea-level. North/South aspect. Deep soil above the limestone.
Certified organic. De-buds but never vendanges en vert. Mowing from May to July to control weed growth but no ploughing. Sulphur and Bordeaux mix are used against oidium and mildew. No pesticides. Organic manure sometimes used during Winter. Manual harvest. Yields average 30 to 35 hl/ha.
Doesn’t destalk; whole bunches only are used. Grapes are crushed by feet. 10 year old 225L barrels used for fermentation, indigenous yeasts only. No chaptalisation. Average temperature of fermentation is 18°C (30°C max.) depending on the vintage. Temperature is not controlled. No cap punching or pumping over during fermentation. Cap punching and pumping over every day during cuvaison. The fermentation lasts for 2 weeks. Uses a Sutter press. Free run and press juices are assembled. 10 year old 225 ltr barrels for the elevage. One racking. 10 months elevage. No batonnage. No fining or filtration. Bottled once a year in September by contract bottler. Only 800 bts per year.
