    50 year old vines, natural yeasts, no fining, no filtration, delicately extracted fruit, sensitive ageing in 20% new oak and 80% cuve, produces an extremely stylish and elegant wine – more than a match for many red burgundies. For drinking now to 2021.

Grape
100% Pinot Noir, 40 yrs old on average. Massale selection on 3309, S04 and 41B rootstock. 7500 vines per hectare trained single guyot.
Terroir
Limestone and limestone-clay soils. 20 to 40cm deep above the limestone mother rock. Average slope 20% - all aspects. 270m above sea-level.
Viticulture
On hillside sites, all the vineyards are enherbé between rows both to help reduce yields and prevent erosion. The vines are ploughed in winter and spring where the vineyards are flatter. No chemical deweeders used. Debuds to lower yields but never practices vendanges en verts. Uses sulphur against oidium, homeopathic doses of herbs and Bordeaux mix against pests, and only occasionally compost. 100% manual. Yields 43 hectos per hectare.
Vinification
Carries out brief maceration à froid at 12°C. Destalked 100%, grapes not crushsed. Vinified in cuve with a maximum temperature of 25°C, using natural, indigenous yeasts. During the alcoholic vinfication carries out 1 pigeage a day and 1 remontage every 2 days. Fermentation lasts for 15 to 18 days. Pressed by pneumatic press. Press wine and free run juice aged apart. Malolactics completed. Aged in 4-5 year old (medium toast) 228ltr barrels. Racked once during a 16 month elevage. Neither fined nor filtered before bottling after 16 months. 8000 bts produced.
