    Really good sauvignon here thanks to organic viticulture, very low yields (45hh compared to most Sancerre at 60hh), good flint rich terroir and fine touch from Vincent Ricard. The wine has lovely texture, citrus and mineral notes with a nice herbal touch of mint and lemon verbena. For drinking now to 2021.

12 hectares
100% Sauvignon. 25 year old vines. Rootstocks-3309. Massale selection from the domaine. Density of 6666 vines per hectare. Trained single guyot.
Soils comprise clay and limestone mix. Altitude 100 metres facing south-east. 4 to 10% slopes. Soil depth is between 40cm and 10m.
De-bud but do not green harvests. Allows grass to grow to limit yields and ploughs under the row twice a year. Products of contact to prevent oidium and mildiou. Certified organic treatments against pest. Organic compost applied in the spring. Hand harvested (70%) and machine harvested (30%). Yield between 50 and 55hl/ha.
Pneumatic press. Pressing for 1h30 to 3h. Juice left to decant over 7 days. Indigenous yeasts only. No chaptalisation. Alcoholic fermentation in temperature controlled stainless steel and wooden vat at 17-19°C for 15 to 30 days. No malolactic. Batonnage. Filtered but unfined and bottled in March, using their own equipment. 60000 to 80000 bottles produced.
