    This wine comes from 50 year old vines in Saint-Andelain, grown on flinty soils. An understated wine with intriguing hints of mint and celery on the nose and a gentle persistence on the palate.

13 hectares – 0.40 hectares of which is for Pouilly-sur-Loire (the majority is Pouilly-Fumé)
Grape
100% Chasselas – 60yr old vines that lie bang in the middle of Jeannot’s Pouilly Fumé vineyard. Trained single guyot. Root stock-3309C and Franc de Pied. Density of 6,600 vines per hectare. Massale selection from own vines.
Terroir
Soil comprises clay and flint on gentle rolling hillsides. Elevation 225 metres and facing south.
Viticulture
De-buds and green harvests when needed. Grass grown between rows to limit yields. Adds organic compost/fertiliser in the spring. Machine harvested. Yield of 60 H/H
Vinification
Pneumatic press. Juice left to decant over 12-24 hours. Selected yeasts. Alcoholic fermentation in temperature controlled stainless steel at between 16 and 20C for 15 days. No malolactic. Left on fine lees until racked off the gross lees in February – this also helps to avoid any reduction. Elevage – In cuve for 6 months with 3 rackings. Fined with bentonite and filtered with kieselguhr. One bottling per vintage, using their own equipment. Total production: 3,000 bottles
