    This comes from 30 to 50 year old vines planted high on a due south-facing hillside in a soil of sand, limestone and yellow ‘millarge’. Fermented in cuve and then aged in four-five year old 400ltr barrels. Notable red fruit aromas lead to a palate that has similarly intense, red fruits, and a marked limestone, mineral flavour, with good structure, ripe tannins and beautiful length. For drinking now to 2023.

100% Cabernet Franc (known locally as Breton) 40 years old. Planted at a density of 5000 vines per hectare. Local massal selection
The soils are mainly yellow tuffeau. South aspect on 20% slope. 50 mtrs above sea-level. Soil depth approx 40cm
Certified organic viticulture (Ecocert) since 1997. Debud but don’t carry out vendanges en vert. No herbicides. Ploughing during Winter; leave the grass to grow from May onwards. Use sulphur against oidium. Manual harvest. Yield 35 hectos per hectare.
Destalked 100%. Alcoholic fermentation in 60 hl tronconic wooden vat. Natural indigenous yeasts. 2 cap punching and 1 light pumping over per day for 3 weeks at temperatures varying between 16 to 22° C. Elevage of 16 months in 2 to 5 years old 400L barrels medium toast. Racked once after malos. Unfined and unfiltered. Only one bottling a year, usually in March. Between 7000 and 10000 bottles produced.
