    Bertrand’s first cuvée comes from low yields of organically certified 30yo vines planted in Restigne in sandy soil with limestone at depth. Fermentation is carried out by gentle infusion with just three or four pump overs during two weeks. A clear mid-red colour with cherry glints, it has attractive red fruits, is quite saline, and is a real vin de soif. No sulphur. For drinking now to 2018.

Grape
40 year old vines. Trained guyot pousard. 4500 vines per hectare.
Terroir
Flat aspect, east facing. Sandy soil, 2 metres deep. 40m above sea-level.
Viticulture
Debuds, no green harvest. Leaves grass to grow between the rows, on 75% of the surface. Soil is worked under the row during the winter. Sulphur used against oidium and Bordeaux mix and horsetail used against mildew. No treatments against pests. Occasionally uses organic compost at the end of winter. Manual harvest with sorting of the grapes in the vineyard. Yield of 30 h/h. Certified Organic (Ecocert(C)) Biodynamic (Demeter(C))
Vinification
No cold prefermentation. 100% destalked. Grapes are not crushed. Fermented in 40hl stainless steel cuve with natural yeast. No chaptalisation. Fermentation for 2 to 3 weeks at 25˚C on average. Light extraction, with around 10 pumping over and 1 or 2 crushing during the fermentation process, if necessary. Cuvaison up to 10 days depending on ripeness. Vertical press used – press wine is blended with free-run juice. Natural malolactic fermentation. The wine is aged in 40hl stainless steel in the winter. Racking 2 to 3 times. Aged for 6 months on average. No batonnage, no fining, but filtration by earth at bottling. Bottled once before the summer, usually June. Produce 600 bottles per year on average.
