    An individual, unique wine from a top swiss variety, vinified very slowly in recent 600 litre barrels over 18 months.  An attractive pale gold colour, there is a floral hint on the nose, a well-balanced attack, with ripe citrus fruit and a notable saline kick on the finish.  For drinking now to 2019.

100% Petite Arvine (swiss variety). Overgrafting on Cinsault already planted. 30 year old vines trained cordon de royat on trellis. 4000 vines per hectare on average
Terroir
Clay and limestone, 280 mtrs above sea-level. Flat aspect.
Viticulture
Certified organic by Ecocert©. Light debudding. Doesn’t carry out vendanges en vert. Ploughing once in Summer. Uses copper, sulphur and infusion of horsetail against oidium and mildew. No chemical herbicides or pesticides, only organic fertilizers or compost in Spring. Harvested by hand. Grapes are sorted in the vineyard. 25 to 30 hectos per hectare yield.
Vinification
No destalking. Pressing for 2 hrs, settling of the juice for 48 hrs. Fermentation in 4 year old 500L barrels (at 16°C to 20°C) using natural, indigenous yeasts. Alcoholic fermentation for 2 months (on some vintages, like 2010, refermentation during the Summer). The wine naturally carries out its malolactic fermentation. Aged for 12 to 18 months in 4 year old 500L barrels, light toast. The wine spends the last 2 or 3 months in cuve before bottling. Racked twice. No bâtonnage. No fining; sterile filtration at bottling because of the residual sugar. Only one bottling either in November or beginning of March. 2000 bottles produced on average. Ecocert© certification.
