    An individual, unique wine from a top swiss variety, vinified very slowly in recent 600 litre barrels over 18 months.  An attractive pale gold colour, there is a floral hint on the nose, a well-balanced attack, with ripe citrus fruit and a notable saline kick on the finish.  For drinking now to 2020.

    This is a very special, unique sweet wine made from grapes allowed to shrivel on the vine until early December. It is the only sweet wine that Hildegard has ever produced, and was given an eight year elevage in just one demi-muid.  Hildegard advises drinking it with a strong blue cheese like Roquefort or just enjoying it by itself at the end of a meal. For her it conveys memories of a Moroccan souk, with dried fruits, stewed pineapples, saffron, and notable spices. For drinking now to 2020+.

    Hildegard’s red, produced from the cooler terroirs of Assignan in the St Chinian appellation, has a succulent, spicy, dark cherry fruit with a hint of garrigue herbs.  It’s fresh and easy to drink and is very moreish.  For drinking now to 2019.
