    Hildegard’s red, produced from the cooler terroirs of Assignan in the St Chinian appellation, has a succulent, spicy, dark cherry fruit with a hint of garrigue herbs.  It’s fresh and easy to drink and is very moreish.  For drinking now to 2021.

60% Malbec, 25% Syrah and 15% Cabernet Franc on 161.49 rootstock for Syrah, SO4 rootstock for Malbec and R110 rootstock for Cabernet Franc. 20 year old vines trained cordon de royat on trellis. 3300 vines per hectare on average
Clay and limestone, between 280 and 300mtrs above sea-level. Flat aspect.
Certified organic by Ecocert©. Light debudding. Doesn’t carry out vendanges en vert. Ploughing during Spring and Summer. Uses Bordeaux mix and sulphur against oidium and mildew. No chemical herbicides or pesticides, only organic fertilizers or compost in Spring. Harvested by hand. Grapes are sorted in the vineyard. 40 hectos per hectare yield for Malbec and Cabernet Franc and 20hl/ha for Syrah.
No cold prefermentation. 100% destalked. The grapes are very lightly crushed. Fermentation in stainless steel vat (at 25°C to 32°C) using natural, indigenous yeasts. No chaptalisation. Uses a cooling system to bring the temperature down if it rises above 32°C. Alcoholic fermentation for 1 week for Malbec, 2 to 3 weeks for Cabernet Franc and Syrah. Pumping-over and cap-punching every day at the beginning of the fermentation and every other day after 2 weeks. Cuvaison for 25 to 30 days. Pressed with a pneumatic Sutter. Press wine is blended with free-run juice. Aged for 10 months in stainless steel vat (for ¾) and in 5 to 6 years old 500L barrels (¼), medium toast. Racked 3 to 4 times. No bâtonnage. No fining; filtration with K5 plates. Only one bottling in July. 5.000 bottles produced on average. Ecocert© certification.
