    Yves planted three parcels of mourvèdre on the same limestone-clay hillside as his two other wines. Made from low yields, hand-harvested and cuve aged, this has classic mourvèdre qualities with spicy black fruits with a hint of game, a good structure and savoury tannins. Excellent value for money. For drinking now to 2018.

Winemaker
Yves Falmet who originates from the Aube in Champagne. Qualified oenologue. Worked in California, Australia, New Zealand, Hungary and France to gain winemaking and vineyard experience.

Grape
100% Mourvèdre. 13 year old vines. Clonal selection (369 and 249) on R110 rootstock. 4.000 vines per hectare. Vines are trained gobelet.
Terroir
Limestone. 200 mtrs above sea-level. North – North/West aspect on 30° slopes. Soil is 1m deep.
Viticulture
Debud but no vendanges en vert. Leaves grass to grow throughout the vineyard. Cut grass in May-June. 0 to 2 treatments max against mildiou, 2 to 3 treatments max against oïdium. Weed killer is used only as and where there are affected areas No fertilizers. Work according a rational and not dogmatic ecology. Harvested by hand. Sorting in the vineyard if needed. Around 30 hectos per hectare yield.
Vinification
No cold maceration. 100% destalked. Grapes are lightly crushed. Alcoholic fermentation in concrete vats for 7 to 10 days at 25°C to 30°C using selected yeasts. 2 pumping over / cap punching per day during fermentation. Temperature of fermentation is controlled by a cold generator if needed. 3 to 5 weeks cuvaison. Pressed by a horizontal Vaslin press. The press wine is blended with the free run juice. Aged for 24 months in concrete vats. 2 to 3 rackings per year. No bâtonnage, no fining and no filtration. Only one bottling per year. 10.000 bottles produced on average.
