    This wine takes its name as the vines are planted in a deep bed of sandy soil ‘ex arena’, developed on marine and alluvial deposits in Corneilhan, 20k from the Mediterranean. Yields are very low, between 10 to 20hh. Vinified and aged in cuve, this wine has a lovely dark plum but translucent colour. A 100% whole bunch fermentation provides an excellent structure, and the wine has spicy, black cherry fruit with a most attractive freshness. For drinking now to 2021.

40 year old vines. 9000 vines per hectare for Mourvèdre and 5000 for Grenache.
“Les Sables de Corneilhan” - a deep, narrow bench of sandy sediment. Gravels, ancient red sands. Terraces from Villafranchien, very deep sedimentary soil (40 meters deep; pebbles from the Cévennes). 40 mtrs above sea-level. South aspect.
Doesn’t debud. Carries out light vendanges en vert. Leaves grass to grow throughout the vineyard. Ploughing once in Spring and sowing grass. Uses organic treatments against oidium and mildew. No chemical herbicides or pesticides, only organic fertilizers or compost if needed. Harvested by hand. Uses a sorting table if needed. Less than 25 hectos per hectare yield.
Doesn’t destalk. Vinifies with whole bunches. Grapes are not crushed. Alcoholic fermentation in concrete vats for 3 weeks using natural, indigenous yeasts. Pressed by a manual hydraulic press. The press wine is aged separately. Aged for 9 months in stainless steel vats. Light filtration and fining before bottling. Only one bottling in June. 9000 bottles produced on average.
