    Brigitte’s Faugères vines grow near Bédarieux on a terraced, north facing hillside for the syrah and grenache, and a due south facing plot for the mourvèdre.  Faugères is renowned for its thin soils developed on underlying schist, here evident in brittle, thin layers, with lots of iron, which may help to imbue the fruit with a signature stony mineral flavour.  Black cherry and blueberry fruit is abundant and dense, with spicy and wild garrigue herb notes, and this wine opens out really well with a good carafeing.  For drinking now to 2019.

50% Syrah and 50% Grenache/Mourvèdre. 30 year old vines trained gobelet and Cordon de Royat.
Terroir
Schist. 300 mtrs above sea-level. South aspect for Mourvedre and North aspect for Grenache and Syrah.
Viticulture
Debudding. Carries out light vendanges en vert. Leaves grass to grow throughout the vineyard. Ploughing once in Spring and sowing grass. Uses organic treatments against oidium and mildew. No chemical herbicides or pesticides, only organic fertilizers or compost if needed. Harvested by hand in small trays. Uses a sorting table if needed. Less than 25 hectos per hectare yield.
Vinification
100% destalked. Grapes are not crushed. Alcoholic fermentation in stainless steel vats for 3 weeks using natural, indigenous yeasts. Temperature is controlled. No chaptalisation. One pigeage/remontage every day or every two days during fermentation (depending on what is needed). Regular pigeages during cuvaison. Pressed by a manual hydraulic press. The press wine is aged separately. Aged for 11 months in stainless steel vats. Light filtration and fining before bottling. Only one bottling in June. 10000 bottles produced on average.
